MM Fresh was started in Hong Kong in 2012 by two mothers keen to feed their children with real foods: hormone-free and antibiotic-free meat, sustainable/wild fish as well as other natural foods void of artificial ingredients.
Known for its clean air, crystal waters and unpolluted landscape, the pair began importing some of New Zealand’s finest grass-fed lamb, beef and sustainable fish into Hong Kong as a means of feeding their friends of family. It soon became apparent that the market was larger than than their social circle and the business was born.
Today, MM Fresh is a premium food brand specialising in fresh food produce including grass-fed, antibiotic-free and hormone-free lamb & beef, sustainable seafood and gourmet, handmade pies from “I Love Pie”. As well as regular size portions, MM Fresh focuses on serving families and thereby offers 100g baby sized portions of fish which have deboned and skinned.
Our products are carefully selected from farms with vertically integrated abattoirs and vacuum packed in New Zealand prior to being airfreighted into HK. They therefore contain the freshness and quality of local production, with premium taste and texture preferred by gourmet foodies as well as Michelin starred chefs.
Our company is established to fit the niche market of the premium sector at an affordable price so that families can enjoy the goodness of fresh food delivered to their homes without the inconvenience of going to the supermarkets where prices can also be substantially higher.
What is Ike-Jime?
Ikejime (活け締め?) or Ikijime (活き締め?) is a method of paralyzing and bleeding fish to maintain its quality. The technique originated in Japan, but is now in widespread use. It involves the insertion of a spike quickly and directly into the hind brain, thereby causing immediatebrain death. A fish brain is usually located slightly behind and above the eye. Websites such as www.ikijime.com show the brain location of many fish species. When spiked correctly, the fish fins flare and the fish relaxes, immediately ceasing all motion. Destroying the brain and the spinal cord of the fish will prevent reflex action from happening. Movement of the muscle consumes Adenosine triphosphate (ATP) in the muscle and lactic acid is produced, thereby making the fish sour. The blood contained in the fish flesh retracts to the gut cavity, which produces a better coloured and flavoured fillet. This method is considered the fastest and most humane method of killing fish.

Premium New Zealand 100% Grass-fed Lamb and Angus Beef
Who are we?
Our parent companies have long been supplying the premium supermarkets and Michelin Star restaurants worldwide with fresh seafood and premium meat products. Now we have formed an energetic, young and home delivery food services company.
MM Fresh fills the niche market for those discerning consumers who want to be certain that the food they are giving to their families is fresh, safe, and from an unpolluted, natural environment.
The lamb, as with the Angus beef range, is farmed in New Zealand by a Maori farming co-operative consortium under prime conditions. Both the lamb and the Angus beef are 100% grass-fed and the beef is prime steer grade. Then it is processed at their own abattoir and packed at the source in New Zealand with vacuum sealed pack before being air freighted chilled to arrive in our chilled warehouse in Hong Kong. All of the meat products can be traced back to each individual herd and pasture. Under this condition, the unopened meat package can be kept in the refrigerator at 4 degrees Celsius for approximately 40 days.
What is our mince made from?
We sell fresh New Zealand beef and lamb mince made from 100% grass-fed meat, with zero use of supplements. Crops are non-GM. The lamb, as with the Angus beef range, is farmed by a Maori farming co-operative consortium before being processed at their own abattoir and vacuum packed and sealed at source in New Zealand before being air freighted chilled to arrive in Hong Kong. All our meat products can be traced back to each individual herd and pasture. The beef mince is from the topside, so all muscle meat, and the lamb mince is from the leg. The emphasis is therefore on high quality without including any trimmings. It arrives fresh and has never been previously frozen so you may freeze it on arrival to defrost safely at a later date. It has always been a favourite of mine, long before I joined MM Fresh – it’s great to showcase in meatballs rather than hiding it in a chilli – obviously there are many recipe options! We have no minimum spend or delivery fee for new customers as always, in case you would like to try a small amount. Each portion is 500g: $75 for beef and $90 for lamb.
What is the fat content of your mince?
The fat content our mince is approximately 10%.
The good thing about our beef mince fat is that its ” internal fat” melts away when cooking and adds flavour, juices, and enhances the meal. If you have less than 10% fat in the mince, then it turns to mush and looks like sausage meat.
This is not to be confused with external fat which many processors will use to decrease the price. This happens in some supermarket brands as an example.
What is good about line caught fish?
Wild caught fish is fish that is caught from the natural ocean environment. Wild caught fish live in an ocean environment and derive 100% of their nutrition from this environment. They also reproduce in this environment. This is different from farmed fish which is fish that is raised in ponds or sea cages. The fish are put in the farm as fingerlings and fed with fish meal until they reach a desired size at which time they are harvested.
Some shell fish species, e.g. oysters and mussels are farmed in the sea. They however derive their nutrition from the ocean rather than supplemental feeding of fish meal.
We prefer to supply wild caught fish where ever possible as it is more natural.
Is our fish sustainable?
With the world’s oceans being rapidly depleted we are very conscious that we only wish to supply product from sustainable sources and sustainable methods of fishing. Our wild fish is sustainable because it is line caught, subject to sustainable quota management programs and certified so by regulatory bodies such as Friend of The Sea and Marine Stewardship Council (dependent on source and species).
Is our salmon farmed?
Yes, it is farmed, but the only farmed species in the world to gain the green/”best choice” rating from Seafood Watch. To learn about the criteria for these awards, you can visit the Monterey Bay Aquarium website.
